Details of Payment Profile Updated webhook notification

I've been looking at the different event types that are notified of via webhooks here:

Authorize.net API Documentation - Webhooks

However, I was hoping to get more details on some event types, for instance, the "net.authorize.customer.paymentProfile.updated" event.

1. How do we know which property of the given Payment Profile was updated?

2. Is there a way to get the old value? The new value can be queried.

3. Any guidelines on specific use cases that can be notified of via this event?

I am still trying to get my head around on what 'actions' to take when we are receive these events. Any documentation that details each event type (other than the one above) will be very helpful!
