Accept Customer Form in testMode

Can I use the Accept Customer form in testMode to create payment profiles that are charged in my production environment?

Background: I would like to use the Accept Customer form to create payment profiles for both returning and guest customers. Ideally, I would not require users to input their billing address, as this is a significant driver of abandoned carts. It appears that the docs suggest using testMode if I do not want customers to enter a billing address as quoted here,

"Important: liveMode requires a billing address. If you do not want to collect a billing address, you must use testMode."

This guidance is confusing, because I assume testMode would not work in a production environment, with real money changing hands. However, this assumption may be wrong. Can you please clarify what testMode means and if I can use this setting in production?
