Can the merchant receipt emails be customized? For example, we don't ship anything, so shipping information does not apply to us.

It is currently not possible to customize the system-generated receipts sent by Authorize.Net. If you need custom receipts, you'll need to create and send those yourself.
You are welcome to post this as a new feature using our Ideas forum. This will allow others to vote on and make suggestions to improve the request.
